The American Lobster is born and bred only in the cold waters of the North Atlantic. It turns bright red when cooked, but is a dark blue-green when alive. It takes about six years for a lobster to weigh one pound. Native lobsters are trapped by small boats quite close to shore on the rocky bottoms of the waters around Boston, Massachusetts. To cook live lobsters weighing 3/4 to 2 pounds drop them into boiling salted water. When the pot comes back to a boil, allow 16 to 20 minutes (depending on size). Serve with sweet corn, lemon wedges, melted butter and plenty of napkins.
