LOBSTER
(HOMARUS AMERICANUS)
Most Lobsters are green with black
mottling when caught, but despite
varying shades they all turn
glistening Red when boiled.
Lobsters are a very kinky, oddball
and ancient Crustacean. Bones
(shell) are on the outside, nervous
system is along the belly, the brain
is near the throat, it listens with the
legs, tastes with the feet and has
molars in the stomach, the kidneys
are behind the forehead. They are
known to have existed 100 million
years ago.
One of the most profitable catches
along the Atlantic Coast, this
maritime delicacy finds its way to
Discriminating Tables around the
world.
